Kale Salad with Quinoa and Roasted Butternut Squash

Instructions
  1. Peel and dice one medium sized butternut squash
  2. Place in bowl and toss with olive oil, salt and pepper (nutmeg and cinnamon are also a great addition). Place on baking sheet
  3. Cook in oven at 425 degrees for approximately 20 minutes until tender. Remove from oven and cover with foil. Allow to cool for 20 minutes.
  4. Assemble salad and enjoy!
