Instructions
  1. Begin by quartering the duck into breast/wing and leg/thigh. Reserve the neck, liver, heart and carcass to make patee and duck stock
  2. Rub the duck quarters and place in air tight container for at least 4 hours preferably overnight
  3. Prepare your smoker or grill for indirect cooking.
  4. Smoke the duck skin side up at 225 degrees for 2 hours. The duck fat needs to rendered out slowly, if we cook it too fast you will end up with a greasy duck.
  5. Remove the duck from the smoker and keep warm on a plate covered with foil. Heat your grill up as high as it will go! Here at the restaurant our grill hits 1000+ degrees.
  6. Place the duck skin side down and grill for 2-3 minutes allowing the skin to crisp up. Serve with your choice of side.
