Quinoa with Pesto and Mushroom
  1. Prepare quinoa per package directions. For added flavor add vegetable stock and spices of choice.
  2. Heat saute pan on high and add olive oil.
  3. Saute mushrooms, sundried tomatoes, and broccoli for 2-3 minutes until tender.
  4. Reduce heat, add cooked quinoa and pesto. Toss and cook until hot.
  5. Top with fresh basil. Enjoy!
