Red Chile Posole

Posole (Pozole) is a traditional pre-Columbian soup from Mexico traditionally made with miaze(hominy), pork or other meat, chile peppers, and seasonings.  

Our version is a adaption of a traditional New Mexican Posole made with New Mexico Red Chiles.  

The key to any soup is layers of flavor.  Pick and choose your battles when it comes to making everything from scratch; however the ultimate posole is made with each ingredient being prepared from scratch.

For example the red chile can either be bought from the store or start with dry pods.  Pulled pork could be bought or slow roasted in red chile for 8 hours.  

Another variation of this posole that we make quite often is a green chile chicken.

  1. Combine All ingredients in large stock pot and bring to a boil for 1 hour.
  2. Season to taste. Top with fresh onions, cilantro and a lemon wedge. Enjoy
